Settebello Pizzeria Napoletana

Settebello is one of a handful of pizzerias in the US, and the only one in Nevada, to hold a certification mark from the Verace Pizza Napoletana. So what on earth does this mean? Well, the pizzas are Neapolitan style, and must be made from certain ingredients and in a certain way. The ingredients consist of flour, natural yeast, yeast of beer, and water. The dough is made by hand or a mixer approved by the association’s committee, and must be shaped by hand. The pizza must be cooked directly on the surface of a wood burning oven, which is structured in a bell shape of special brick, with the floor of the oven made of volcanic stone.

So why all the fuss? While I’m not exactly sure, I can tell you that the pizzas are delicious! The dough is a thin crust, crispy on the edges and quite chewy in the middle. Adam likened it to good pita bread. And with the wood burning oven, of course you get that nice, slightly smoky flavor to the dough. The pizzas don’t exactly have a tomato ‘sauce’, but rather are topped with crushed tomatoes (which are low acid, and imported from Italy), with mozzerella pieced on top. I.E. don’t expect anything remotely like a Domino’s pizza with sauce and cheese glopped on top.

We ordered two pizzas; the Settebello, which was topped with pancetta, sausage, mushrooms, pine nuts, basil and olive oil; and the Quattro Stagioni, which was basically a sampling of four pizzas, with quarters of sausage, salame, roasted mushrooms, and kalamata olives (which was my favorite… so simple, but SO delicious). We also ordered the Caprese salad, which was quite good.

One more thing.. the menu has a note that this pizza is really not the type to be ‘taken out’. If you want to get the full effect of this pizza, plan to eat it there! It’s a decent sized restaurant, cozy, and with decent service.

    I finally tried Settebello yesterday. And believe it or not, I have found LOVE… In the form of a real Italian pizza pie! It’s the real deal here, Neapolitan style with crushed tomatoes, parmigiano reggiano & mozzarella, basil, and a fried egg on top. Oh, and the crust! It was done perfectly, slightly blackened around the outside edges while lovingly soft in the inside.

    Settebello is Pizza Heaven. There’s simply no denying it. :-)

    I’m glad to hear you liked it. I really need to get back there soon! I’d place it above both Pizzeria Mozza in LA and Pizzeria Bianco in Phoenix, both which seem to get way more press than Settebellos…
